Yes, carbohydrates coming from whole, unprocessed plant foods that also contain fiber and phytonutrients are extremely benefical for your health. Our bodies are designed to thrive on carbs, it’s the most efficient energy source we have.⠀

There is absolutely no reason to be afraid of carbs as long as you eat foods in their natural form. These foods are among the healthiest on the planet, providing an unbelievable amount of health benefits.⠀

If you’re a new vegan and track your macros, don’t be afraid of eating more carbs than you previously did. Getting 60-70% of your calories from carbs is absolutely normal and healthy.⠀

Carbs from whole foods won’t make you fat or skinny fat, either. That’s what a continuous calorie surplus and a lack of exercise will accomplish.⠀

I’ve seen this question being answered many times already, but since I still get asked quite often by many of you, I thought this probably can’t be said often enough. 🙂⠀

Loaded Scalloped Potatoes
These Loaded Scalloped Potatoes are next level comfort food! Layers of potatoes with a rich, creamy sauce, cheese, bacon and caramelized onions make for an unforgettable side dish. This comfort classic just got taken to the next level!

Ingredients
2 tbsp extra virgin olive oil
2 onions medium, thinly sliced
12 oz bacon cooked and crumbled
4 tbsp unsalted butter
4 tbsp all purpose flour
3 cups whole milk
3 lbs potatoes thinly sliced (use Yukon or russet)
8 oz cheese I used a combination of sharp cheddar and Gruyere, any cheese will work
salt and pepper to taste
Instructions

Preheat oven to 350F. Lightly grease a 9x13 or deep 9x9 baking dish with butter and set aside.
Add olive oil to a medium skillet and heat over medium heat. Add thinly sliced onion and salt and pepper, to taste. Cook over medium heat, stirring occasionally until onions become caramel in color. Remove from skillet and set aside.
Wipe skillet clean and cook bacon until crisp. You can alternatively bake the bacon while the onions are cooking, saving a little time. Remove bacon from skillet, drain grease, and wipe clean again.
Melt butter over medium heat. Sprinkle flour on top of butter and whisk to form a roux. Cook for 2 minutes.
Slowly add the milk, whisking constantly. Bring roux to a simmer and let thicken just slightly, about 2 to 3 minutes after coming to a simmer. Remove from heat and set aside.
Assembly
Layer half of the potatoes, half of the caramelized onions, half the bacon, half the cheese, and half the sauce, in that order in the prepared baking dish. Repeat.
Cover baking dish with foil and bake for 1 hour. Remove foil and bak an additional 30 minutes or until potatoes are easily pierced with a fork. Remove from oven and let cool 10 minutes before serving.
Notes
Recipe can be easily doubled.

Ingredients
3 pound London Broil Roast
Salt and pepper
2 tablespoons butter
1 tablespoon avocado oil (Click here for my favorite brand)
1 small onion, diced
2 Garlic cloves, minced
1/2 cup beef broth
2 tablespoons tomato paste
2 tablespoons balsamic vinegar
2 tablespoons Brown sugar use sugar free for keto
1 tablespoon Worcestershire Sauce
Equipment
Slow Cooker (Here's the one I love)

Instructions
Season both sides of the London broil generously with salt and pepper.
Searing the London Broil:
Using the sear function on your slow cooker or a large skillet over medium-high heat.
Heat the slow cooker or the skillet and add in the butter and avocado oil.
Sear the London Broil for a few minutes on each side, or until each side is browned.
With the roast in the slow cooker, add in the onion and the garlic.
For the Balsamic Mixture:
In a small bowl, mix together the beef broth, tomato paste, balsamic vinegar, brown sugar and Worcestershire. Pour the mixture over the roast.
Cook in the slow cooker on low for 8 hours, or high for 4 hours.
When finished, shred with two forks and serve with mashed potatoes or mashed cauliflower.
Notes
Use the remaining liquid left in the slow cooker to make a gravy.  You can whisk in 1/2 teaspoon xanthan gum for keto and bring the liquid to a boil.

1/2 teaspoon dried Oregano
1/2 teaspoon dried Thyme

Meat Thermometer (Click here for the one I love)

Instructions
Spray the inside of the air fryer with cooking spray.
Combine the avocado oil, and all of the seasongs in a small bowl.
Rub the seasoning evenly over both hens. You can even lift up the breast skin and rub some seasoning directly on the breast meat for even more flavor.
Place in the air fryer breast side down and cook at 360F for 35 minutes.
Flip the hens and cook for an additional 10 minutes to get the skin crispy.
The hens are finished when the internal temperature is 165F.

PSA: The glaze is straight 🔥.... but it is VERY sweet though. so if you haven’t had “sweets” in a while skip it...the cake is 🔥 w/o it 🙂
